The Heritage Behind Our Spice Blend
Haitian epis (also spelled épis) is a fresh green seasoning paste shaped by Haiti’s layered history. Indigenous Taíno food traditions existed on Hispaniola before Christopher Columbus arrived in 1492. Spain colonized the island, and in 1697 France took control of its western region, creating Saint-Domingue. Enslaved Africans brought culinary knowledge and flavour traditions that blended with local ingredients and foods from Atlantic trade. Aromatics central to epis—scallions, garlic, parsley, thyme, peppers, onions, and cloves—became part of this evolving Creole cuisine. After the Haitian Revolution began in 1791 and Haiti declared independence on January 1, 1804, its cuisine remained a powerful expression of cultural identity. There is no standard epis recipe: families and regions add bell or hot peppers, celery, lime juice, or herbs.
